Simple s'mores dip

Have you had s'mores dip?  I might be late on this but I made my first recently and my-oh-my, it was delicious!  I hadn't planned on posting it (as evidenced by the paper plate of graham crackers and filtered Instagram photo shown here) but I felt I had to help spread the word.  So here's my quick public service announcement: please make s'mores dip as soon as possible!  
I had the chance to do a good amount of cooking and baking during the weekend I made beignets for my family.  I think we gained a couple of pounds during those 2 days but it was totally worth it.  I tried a recipe for chicken with 40 cloves of garlic (it was great) and made risotto for another dinner.  We not only had beignets but also French toast that weekend and in between all that, there was this easy-peasy s'mores dip for dessert.  We loved it so much, and with the cold winter nights ahead, this is the kind of treat to make and dig into with your family.

So let me give s'mores dip a shout-out and encourage anyone who hasn't tried it to do so.  If you don't have a crowd to feed, it's totally worth going out and buying a small 6-inch cast iron skillet just to make s'mores dip!  And this is a wonderful "recipe" with just 3 ingredients!  You need chocolate chips, marshmallows and graham crackers, for dipping!  Some recipes call for heavy cream or butter but this super simple recipe from Dessert for Two worked beautifully - just place chocolate chips into the skillet (you don't even need to grease it) and stack some marshmallows on top. Put it in a 450 degree oven for 7 minutes or so until the marshmallows are browned (there is no need to broil or to torch them).  Then just take it to the table (with oven mitts, of course) and grab your graham crackers and be in for a treat!

To be honest, I actually don't like regular marshmallows all that much but when they're toasted and all melty like this, it's a whole different story!  This dip is so easy to make, fun to eat with your family (everyone gets messy) and just tastes incredible, better than regular s'mores if you ask me and we all know that's pretty wonderful already!
Just picture yourself on a cold night, sitting around the table with your significant other or your family.  Hot s'mores dip comes to the table and you grab a graham cracker and poke it into the dip...you actually hear a little crack from the toasted marshmallow as it yields, letting your cracker break through into the warm pool of melty sweet marshmallow and dark chocolate beneath... 

It's pretty amazing! 

Recipe:

S'mores Dip (for 2 or 3)

From Dessert for Two

- One 6-inch skillet of delicious s'more dip goodness - 

1 scant cup chocolate chips* 

8 large marshmallows (or use enough mini ones to cover the top)
Graham crackers, for dipping

* I used Ghirardelli 60% chips and I think 1 cup is a little more than you need so I recommend a scant cup. 


Preheat oven to 450 degrees. 


Place chocolate chips in a 6-inch cast iron skillet.  Snip large marshmallows in half (this is a fun job for kids) and place them on top of the chocolate chips (you could also use mini marshmallows).  Place skillet in the oven and bake for 7-9 minutes, until marshmallows are browned.  With oven mitts, carefully remove the hot skillet from the oven and serve immediately with graham crackers for dipping.  Have fun!

    1. I didn't like marshmallows until I had it s'mores style. I still don't enjoy it 'straight up' but all melty and warm, it's a different story...

      I remember you made s'mores dips with different chocolates (like Reese's!). I have to try that next time!! So so good...maybe too good?

    1. I understand because I also do not like marshmallows as they are...but when it's toasted, it becomes similar to the meringue in a Baked Alaska. That, I enjoy very much. : )
