Only thing is this cake *will* stick to parchment too but that said, it would not hurt and it'd be easier to throw out the parchment than to have a thin green layer of matcha cake all over my tea towel! I didn't want to sprinkle this cake with sugar so matcha powder was the other other choice and I didn't want to waste it. It's pretty expensive! : )<br /><br />Anyway, I'm glad it was not a total lost. I do love the green hue matcha gives. Red beans are just your basic soft cooked beans but it's cooked down with sugar so it's like this sweet paste. I have never eaten azuki beans let alone a sweetened version. I'd love to know how it tastes. You did a great job with the roll and the matcha gives it that beautiful colour. A little tip when I roll a sponge to prevent the sticking is to turn out the sponge out onto a sheet of parchment, sprinkled with caster sugar and the parchment is rested on the tea towel which you roll - if that makes sense?! I've never had red bean with almonds, quite intrigued.
